Cheesy Baked Zucchini Tots

Italian seasoning

Salt and pepper

Prep the oven: Preheat to 400°F (200°C) and line a baking sheet with parchment paper.
Dry the zucchini: Wrap grated zucchini in a clean kitchen towel and squeeze out as much moisture as possible. You should end up with about 1 cup packed zucchini.
Mix the ingredients: In a medium bowl, combine the dried zucchini, egg, cheddar, breadcrumbs, Italian seasoning, onion powder, salt, and pepper. Stir until well blended.
Shape the tots: Scoop about 1 tablespoon of mixture and form into small oval-shaped tots. You should get around 16.
Bake: Arrange tots on the prepared baking sheet and bake for 25–30 minutes, flipping halfway through, until golden and crisp.
Serve: Enjoy warm with ketchup or your favorite dipping sauce.
