Deep Dish Apple Crisp

Granulated sugar: 1 cup (set aside ¼ cup for cinnamon sugar)
Cinnamon: 1 teaspoon (to mix with the reserved sugar)
Melted butter or margarine: 2 tablespoons
All-purpose flour: 1 cup
Baking powder: 1 teaspoon
Vanilla extract: 1 teaspoon

Instructions:
Prepare Apples and Dish: Peel and slice enough apples to form an even layer at the bottom of your 8-inch pie plate.
Make the Topping: In a medium bowl, combine 2 eggs, ¾ cup granulated sugar, melted butter or margarine, all-purpose flour, baking powder, and vanilla extract. Mix until just smooth and blended, being careful not to overmix.
Add Cinnamon Sugar: In a small bowl, stir together the reserved ¼ cup sugar and 1 teaspoon cinnamon. Sprinkle this evenly over the sliced apples in the pie plate.
Assemble and Bake: Pour the topping mixture gently over the apples, spreading it evenly to cover them. Bake at 350°F (175°C) for 40 to 45 minutes, or until the topping is set and golden brown.
Serve: Let the crisp cool slightly before serving. It’s wonderful warm and even better topped with vanilla ice cream. Be sure to share this delicious dessert with friends or family!
