Ever since my hubby discovered this, he hasn’t asked for anything else!

Ingredients
4 Italian rolls
1/4 cup olive oil
1 tablespoon red wine vinegar
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon garlic powder
Salt and pepper to taste
1/2 pound sliced salami
1/2 pound sliced capicola
1/2 pound sliced mortadella
1/4 pound sliced provolone cheese
1/4 pound sliced mozzarella cheese
1 cup shredded lettuce
1 large tomato, thinly sliced
1 small red onion, thinly sliced
1/2 cup sliced pepperoncini
1/2 cup sliced black olives
Directions
1. Preheat the oven to 350°F (175°C).
2. Slice the Italian rolls in half lengthwise and place them on a baking sheet, cut side up.
3. In a small bowl, whisk together the olive oil, red wine vinegar, oregano, basil, garlic powder, salt, and pepper. Brush this mixture evenly over the cut sides of the rolls.
4. Layer the salami, capicola, and mortadella evenly over the bottom halves of the rolls.
5. Add a layer of provolone cheese followed by a layer of mozzarella cheese over the meats.
6. Place the open sandwiches in the preheated oven and bake for 7-10 minutes, or until the cheese is melted and the bread is lightly toasted.
7. Remove the sandwiches from the oven. On the top halves of the rolls, layer the shredded lettuce, sliced tomato, red onion, pepperoncini, and black olives.
8. Close the sandwiches by pressing the top halves with the veggies onto the bottom halves with the meat and cheese.

9. Slice the sandwiches in half and serve immediately.
Variations & Tips
For a spicier kick, add some sliced hot cherry peppers along with the pepperoncini. If you prefer a milder sandwich, you can swap the capicola for sliced turkey breast. To make this sandwich a little lighter, use whole grain rolls and add more fresh veggies like cucumber slices or bell pepper strips. Additionally, you can switch up the cheese to your liking, such as using Swiss or American cheese as alternatives.
