Ingredients
→ Meatloaf Base
2 pounds ground chicken (93% lean)
¾ cup grated Parmesan cheese
¾ cup breadcrumbs (Italian-style or plain)
2 large eggs
4 cloves garlic, minced
1 small onion, grated or finely chopped
¼ cup milk
2 tablespoons Dijon mustard
2 teaspoons Worcestershire sauce
2 teaspoons Italian seasoning
1 teaspoon kosher salt
½ teaspoon black pepper
Red pepper flakes (optional)
2 tablespoons fresh parsley or basil, chopped
→ Golden Garlic Parmesan Glaze
½ cup mayonnaise
½ cup shredded Parmesan cheese
1 tablespoon garlic paste or 2 cloves garlic, minced
1 teaspoon Italian herbs
Salt and pepper to taste
Steps
Preheat your oven to 375°F and line a baking sheet with parchment paper. If you prefer using a loaf pan, lightly grease it – this is going to be one amazing meatloaf!
In a large bowl, gently combine the ground chicken, grated Parmesan, breadcrumbs, eggs, minced garlic, grated onion, milk, Dijon mustard, Worcestershire sauce, Italian seasoning, salt, pepper, red pepper flakes (if using), and fresh herbs. Mix just until combined – don’t overwork it or you’ll have tough meatloaf!
Transfer the mixture to your prepared baking sheet and shape it into a firm, even loaf about 8 inches long and 4 inches wide. It should look beautiful and uniform!
In a small bowl, stir together the mayonnaise, shredded Parmesan, garlic paste, Italian herbs, and a pinch of salt and pepper. This glaze is going to create the most amazing golden, cheesy crust!
Spread the glaze evenly over the top of your meatloaf using a spatula. Bake for 45-55 minutes until the center reaches 165°F on a meat thermometer. The top should be golden brown and gorgeous!
Let your beautiful meatloaf rest for 10 minutes before slicing – this allows all those delicious juices to redistribute. Then slice and serve this comfort food masterpiece that’s anything but ordinary!
Tips
This isn’t your grandmother’s meatloaf! The garlic Parmesan glaze creates an incredible golden crust while keeping the chicken moist and flavorful inside.
Ground chicken can be tricky, but the combination of milk, eggs, and that perfect blend of seasonings ensures this stays tender and juicy every time.
The secret is in the glaze – it seals in moisture while adding amazing flavor and that gorgeous golden color that makes this look restaurant-quality!
