Ingredients
1.5 to 2 pounds ground beef
10.5 oz can cream of condensed mushroom soup
10.5 oz can cream of cheddar cheese soup
3 cups cubed frozen potatoes
1 cup shredded cheddar cheese, divided
Salt and pepper to taste
Steps
Preheat oven to 350°F (175°C).
In a skillet, cook the ground beef over medium heat until browned. Drain excess grease. Transfer the cooked beef to a large mixing bowl.
Add the cream of mushroom soup and cream of cheddar cheese soup to the bowl with the beef. Stir well to combine.
Add the frozen cubed potatoes and ½ cup of shredded cheddar cheese to the bowl. Season with salt and pepper, then mix everything thoroughly.
Pour the mixture into a greased 9″ x 13″ casserole dish. Sprinkle the remaining ½ cup shredded cheddar cheese evenly on top. Cover the dish tightly with foil.
Bake covered for 30 minutes. Remove the foil carefully, then bake uncovered for an additional 30 minutes until the cheese is melted and bubbly.
Let the casserole cool slightly before serving.
