Preheat your oven to 375°F (190°C).
In a microwave-safe bowl, combine 1 1/2 cups shredded mozzarella cheese and 2 tablespoons cream cheese. Microwave on high for 1 minute, stir, and then microwave for another 30 seconds until melted and smooth.
Add the almond flour, egg, baking powder, garlic powder, and salt to the melted cheese mixture. Stir until a dough forms.
Divide the dough into four equal portions. Roll each portion into a circle about 1/4 inch thick.
Spread a tablespoon of marinara sauce on one half of each dough circle, leaving a border around the edge.
Top the sauce with crumbled sausage, sliced pepperoni, diced bell peppers, and a sprinkle of shredded mozzarella cheese.
Fold the dough over the filling to create a half-moon shape. Press the edges together to seal, and crimp with a fork.
Place the calzones on a baking sheet lined with parchment paper or in individual aluminum foil containers.
Bake for 20-25 minutes, or until the crust is golden brown and crispy.
Allow to cool slightly before serving.
Variations & Tips
For a vegetarian option, replace the sausage and pepperoni with sautéed mushrooms and spinach. You can also experiment with different cheeses, such as provolone or cheddar, for a unique flavor profile. If you prefer a spicier kick, add a pinch of red pepper flakes to the filling. To make the dough even more flavorful, consider adding Italian seasoning or dried oregano.
