This dish is always a hit at events—it’s the one everyone finishes first.
In the same skillet, add the onion and garlic, cooking until the onion is translucent and fragrant. Stir in the thyme, rosemary, and parsley, cooking for an additional minute.
In a large bowl, whisk together the eggs, milk, cream, and half of the Parmesan cheese. Season with salt and pepper.
Add the cubed bread to the egg mixture, stirring until the bread is well coated. Let it sit for about 10 minutes to absorb the liquid.
Gently fold in the cooked sausage and onion mixture.
Pour the mixture into the prepared baking pan, spreading it evenly. Sprinkle the remaining Parmesan cheese over the top.
Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the pudding is set.
Allow the bread pudding to cool for a few minutes before serving.
Variations & Tips
For a vegetarian version, omit the sausage and add sautéed mushrooms or roasted vegetables like bell peppers and zucchini. You can also experiment with different cheeses such as Gruyere or cheddar for a different flavor profile. If you prefer a spicier dish, consider adding a pinch of red pepper flakes or using spicy Italian sausage. This dish is also a great way to use up any leftover cooked meats or vegetables you have on hand.
