Oven (best)
Oven at 170°C
Put beef in oven 25–35 minutes
Internal temp ≈ 70–75°C (well done but juicy)
Pan + lid
Lower heat
Cover pan
Cook slowly 20–30 minutes, turning once
REST THE MEAT (DO NOT SKIP)
Remove from heat
Cover loosely with foil
Rest 10–15 minutes
This keeps it juicy like the picture.
